INGREDIENTS:
1 clove
2 tsp. fish masala
1tsp coriander powder
1 tsp cumin powder
1 tsp. chili flakes
½ tsp turmeric
1 tsp salt
1 garlic clove, peeled and crushed
2 tbsp. olive oil
1 onion, finely chopped
400g Three Streams L/S salmon, cut into chunks
½ tsp mustard seeds
2 Tbsp. crème fraiche
Coriander, to garnish
Comessa foods Roti’s – plain white flour or whole-wheat
1. Toast the spices in a dry pan until aromatic.
2. Heat the olive oil in a large pan over a medium high heat, then add the onion. Fry until soft and lightly golden, then stir in the spice mix. Cook, stirring, for a couple of minutes, until you can really smell the spices, add crème fraiche. Turn down the heat and simmer for about 10 minutes. Taste for seasoning. Add the salmon and cook for about 5 – 10 minutes until cooked through. Garnish with fresh coriander.
3. Heat the roti’s and serve with the salmon curry.
