Ingredients
2 Comessa Foods Pita breads (white or brown)
2 boneless, skinless chicken breasts (or thighs)
1 tbsp olive oil
1 tsp lemon juice
1 tsp garlic, minced
1 tsp paprika
½ tsp cumin
Salt and pepper to taste
Feta cheese
½ cucumber, sliced or diced
¼ red onion, thinly sliced
2 tbsp chopped fresh parsley
Juice of ½ lemon
1 tbsp olive oil
Salt and pepper to taste
Plain yogurt for tzatziki
Cooking Instructions:
1. Marinate & Grill the Chicken -In a bowl, mix olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper. Add chicken and marinate for 10 minutes (or longer if desired).
2. Grill chicken on a hot grill or pan for 5–7 minutes per side, or until fully cooked.
Let rest for a few minutes, then slice thinly.
3. Prepare the Salad – In a large bowl, combine lettuce, tomato, cucumber, onion, and parsley. Drizzle with lemon juice and olive oil.
4. Season with salt and pepper. Toss to combine.
5. Assemble the Pitas – Warm pita breads slightly. Fill with grilled chicken, salad, and cheese (if using).
